It’s not cracked. It’s not ruined. It’s perfect. With a deep golden crown and an almost custard-like center, this Spanish-born cheesecake breaks every rule — and wins every heart. One bite, and you'll know why the world can’t stop baking it.
Ingredients
- 🧀 600g cream cheese (room temperature)
- 🍬 200g sugar
- 🥚 4 large eggs
- 🥛 250ml heavy cream
- 🥄 1 tbsp flour
- 🌸 1 tsp vanilla extract
- 🧂 Pinch of salt
Preparation
- 1. 🔥 Preheat oven to 210°C (410°F). Line a 20cm springform pan with baking paper, letting it overhang generously.
- 2. 🥣 In a bowl, beat cream cheese and sugar until smooth and creamy.
- 3. 🥚 Add eggs one at a time, mixing well after each.
- 4. 🥛 Stir in heavy cream, then flour, vanilla, and salt. Mix until just smooth — don’t overbeat.
- 5. 🧁 Pour batter into prepared pan.
- 6. 🔥 Bake for 40–45 minutes. The top should be deeply golden and puffed, the center still slightly jiggly.
- 7. ❄️ Let it cool completely in the pan. Chill at least 4 hours before slicing.
