Simple ingredients, clean flavors. Crispy, lemony fish paired with warm potato salad full of herbs and a bit of bite from red onion – the kind of plate that leaves you full but fresh.
For the fish:
🐟 4 white fish fillets (like cod, trout, or hake)
🧄 2 garlic cloves, finely minced
🫒 2 tbsp olive oil
🍋 Juice of ½ lemon
🧂 Salt, pepper, and a pinch of your favorite seasoning blend
For the potato salad:
🥔 600 g potatoes
🧅 1 small red onion (thinly sliced)
🫒 3 tbsp olive oil
🍋 Juice of 1 lemon (or 1 tbsp vinegar)
🌿 Fresh parsley
🧂 Salt and pepper to taste
1️⃣ Season the 🐟 fish and drizzle with oil, lemon juice, and garlic. Let marinate 15 minutes.
2️⃣ Bake at 200°C (392°F) for about 20 minutes, until the edges are golden.
3️⃣ Boil the 🥔 potatoes in their skin, peel, and slice while still warm.
4️⃣ Add 🧅 onion, 🍋 lemon juice, 🫒 olive oil, 🌿 parsley, and season with salt and pepper.
5️⃣ Serve the fish alongside or over the salad. Finish with a squeeze of lemon.
