Crispy on the outside, tender on the inside – packed with zucchini, carrot, and potato.
These veggie patties are quick, simple, and perfect for lunch, a light dinner, or snacking!

Ingredients

Preparation

  1. 1️⃣ Grate the zucchini, carrot, and potato. Sprinkle with salt and let sit 5–10 min, then squeeze out excess moisture.
  2. 2️⃣ Add chopped onion, 🥚 eggs, 🍞 breadcrumbs, herbs, salt & pepper. Mix until well combined.
  3. 3️⃣ Shape into small patties with your hands.
  4. 4️⃣ Fry in a pan with a little 🛢️ oil until golden on both sides, or bake at 200°C (392°F) for about 20 minutes per side.
  5. 5️⃣ Serve with sour cream, yogurt dip, or a side salad.
