🥕🥒 Golden Veggie Patties – Crispy, Light & Meat-Free

Description
Crispy on the outside, tender on the inside – packed with zucchini, carrot, and potato.
These veggie patties are quick, simple, and perfect for lunch, a light dinner, or snacking!
Ingredients
- 🥒 1 medium zucchini
- 🥕 1 medium carrot
- 🥔 1 medium potato
- 🥚 2 eggs
- 🧅 2 green onions (or ½ small yellow onion)
- 🍞 2–3 tbsp breadcrumbs (or oats)
- 🧂 Salt & pepper to taste
- 🌿 Fresh parsley or dill
- 🛢️ A bit of oil for frying
Preparation
- 1️⃣ Grate the zucchini, carrot, and potato. Sprinkle with salt and let sit 5–10 min, then squeeze out excess moisture.
- 2️⃣ Add chopped onion, 🥚 eggs, 🍞 breadcrumbs, herbs, salt & pepper. Mix until well combined.
- 3️⃣ Shape into small patties with your hands.
- 4️⃣ Fry in a pan with a little 🛢️ oil until golden on both sides, or bake at 200°C (392°F) for about 20 minutes per side.
- 5️⃣ Serve with sour cream, yogurt dip, or a side salad.
