There was always a smell before we saw the stack. Ripe bananas. Toasting oats. Butter melting in the pan. These pancakes taste like slow Sunday mornings — and they come together in 15 minutes.
🍌 2 ripe bananas
🥚 2 eggs
🌾 100g oat flour (or blended oats)
🌸 1 tsp vanilla extract
🧂 1 pinch salt
🧈 Butter or oil for cooking
1. 🥣 Mash bananas in a bowl until smooth.
2. 🥄 Add eggs, vanilla, and salt. Whisk together.
3. 🌾 Stir in oat flour until you get a thick batter.
4. 🔥 Heat a non-stick pan with a little butter or oil. Spoon small rounds of batter.
5. ⏱️ Cook 2–3 minutes per side, until golden.
6. 🍯 Serve with honey, nut butter, fruit — or just plain.
