Ingredients
- Rosehip base πΉ
- πΉ 300 ml strong rosehip tea, chilled (1ΒΌ cups / 10 fl oz)
- π· 240 ml pomegranate juice, chilled (1 cup / 8 fl oz)
- π 35 ml fresh lemon juice (2 tbsp + 1 tsp / 1.2 fl oz)
- π― 25 g honey or sugar syrup (1 tbsp + 1 tsp / 0.9 oz)
- π§ 1 tiny pinch fine sea salt

- π§ 400 ml sparkling water, very cold (1β
cups / 13.5 fl oz)
- π§ 300 g crushed ice (3 cups / 10.6 oz)
- πΏ 12 fresh mint leaves
- π 4 thin lemon wheels
- β€οΈ 40 g pomegranate seeds (ΒΌ cup / 1.4 oz)
- πΉ 4 dried rosehip pieces or edible rose petals, optional
Preparation
- 1οΈβ£ Brew the rosehip tea πΉ
- Steep 12 g dried rosehip tea (3 tbsp / 0.42 oz) in 350 ml hot water (1Β½ cups / 12 fl oz) for 10 min. Strain and chill completely before using.
- 2οΈβ£ Mix the ruby base β€οΈ
- In a jug, combine chilled rosehip tea, pomegranate juice, lemon juice, honey, and a tiny pinch of salt. Stir for 20 sec until the honey dissolves and the base looks glossy.
- 3οΈβ£ Wake the mint πΏ
- Clap the mint leaves gently between your palms to release aroma. Add them to the jug and stir once. Do not crush them too much, so the drink stays clean and elegant.
- 4οΈβ£ Build over ice π§
- Fill 4 tall glasses with crushed ice. Pour the rosehip pomegranate base evenly into each glass, filling them about halfway.

- Top each glass with very cold sparkling water. Stir once from bottom to top with a long spoon, just enough to blend without losing the bubbles.
