This stew tastes like Sunday silence and soft slippers. It’s the kind of meal monks might eat after a long day of thinking deep thoughts… or you, after a long day of dodging responsibilities. Simple, filling, and full of gentle flavor.
🥔 4 medium potatoes, peeled and cubed
🧅 1 large onion, finely chopped
🥕 1 carrot, sliced
🧄 2 garlic cloves, minced
🍅 2 tbsp tomato paste
🫒 4 tbsp olive oil
🌿 1 bay leaf
🧂 Salt & pepper to taste
💧 600ml water
1️⃣ Heat olive oil in a pot and sauté onions until translucent.
2️⃣ Add garlic and carrot, cook for 2–3 minutes.
3️⃣ Stir in tomato paste and cook for 1 minute.
4️⃣ Add potatoes, bay leaf, salt, pepper, and water.
5️⃣ Bring to a boil, then reduce heat and simmer until potatoes are tender (20–25 min).
6️⃣ Optional: mash a few potato chunks to thicken the stew.
