Ingredients

Preparation

  1. 1️⃣ Heat olive oil in a pot and sauté onions until translucent.
  2. 2️⃣ Add garlic and carrot, cook for 2–3 minutes.
  3. 3️⃣ Stir in tomato paste and cook for 1 minute.
  4. 4️⃣ Add potatoes, bay leaf, salt, pepper, and water.
  5. 5️⃣ Bring to a boil, then reduce heat and simmer until potatoes are tender (20–25 min).
