Grandpa wasn’t a cook – but this was his “fancy” dish. He’d slap herbs on fish like he was planting a garden. The result? Crispy skin, flaky cod, and that one meal he insisted on plating himself.

  1. 1️⃣ Preheat oven to 200°C (390°F).
  2. 2️⃣ In a bowl, mix breadcrumbs, parsley, lemon zest, garlic, olive oil, salt, and pepper.
  3. 3️⃣ Pat fish dry and press the herb mix firmly onto the top side.
  4. 4️⃣ Place fillets on parchment-lined tray, crust side up.
  5. 5️⃣ Bake for 12–15 min until crust is golden and fish flakes easily.
  6. 6️⃣ Serve with lemon wedges and maybe... a proud grandpa story.
