Description
Grandpa wasn’t a cook – but this was his “fancy” dish. He’d slap herbs on fish like he was planting a garden. The result? Crispy skin, flaky cod, and that one meal he insisted on plating himself.
Ingredients
- 🐟 2 cod fillets (or any white fish)
- 🌿 2 tbsp chopped parsley
- 🍋 1 tsp lemon zest
- 🧄 1 garlic clove, minced
- 🍞 3 tbsp breadcrumbs
- 🫒 2 tbsp olive oil
- 🧂 Salt and pepper, to taste
- 🍋 Lemon wedges, for serving
Preparation
- 1️⃣ Preheat oven to 200°C (390°F).
- 2️⃣ In a bowl, mix breadcrumbs, parsley, lemon zest, garlic, olive oil, salt, and pepper.
- 3️⃣ Pat fish dry and press the herb mix firmly onto the top side.
- 4️⃣ Place fillets on parchment-lined tray, crust side up.
- 5️⃣ Bake for 12–15 min until crust is golden and fish flakes easily.
- 6️⃣ Serve with lemon wedges and maybe... a proud grandpa story.
