Description
Grandpa wasn’t a cook – but this was his “fancy” dish. He’d slap herbs on fish like he was planting a garden. The result? Crispy skin, flaky cod, and that one meal he insisted on plating himself.
Ingredients
🐟 2 cod fillets (or any white fish)
🌿 2 tbsp chopped parsley
🍋 1 tsp lemon zest
🧄 1 garlic clove, minced
🍞 3 tbsp breadcrumbs
🫒 2 tbsp olive oil
🧂 Salt and pepper, to taste
🍋 Lemon wedges, for serving
Preparation
1️⃣ Preheat oven to 200°C (390°F).
2️⃣ In a bowl, mix breadcrumbs, parsley, lemon zest, garlic, olive oil, salt, and pepper.
3️⃣ Pat fish dry and press the herb mix firmly onto the top side.
4️⃣ Place fillets on parchment-lined tray, crust side up.
5️⃣ Bake for 12–15 min until crust is golden and fish flakes easily.
6️⃣ Serve with lemon wedges and maybe... a proud grandpa story.
