Description

Grandpa wasn’t a cook – but this was his “fancy” dish. He’d slap herbs on fish like he was planting a garden. The result? Crispy skin, flaky cod, and that one meal he insisted on plating himself.

Ingredients

  • 🐟 2 cod fillets (or any white fish)
  • 🌿 2 tbsp chopped parsley
  • 🍋 1 tsp lemon zest
  • 🧄 1 garlic clove, minced
  • 🍞 3 tbsp breadcrumbs
  • 🫒 2 tbsp olive oil
  • 🧂 Salt and pepper, to taste
  • 🍋 Lemon wedges, for serving

Preparation

  • 1️⃣ Preheat oven to 200°C (390°F).
  • 2️⃣ In a bowl, mix breadcrumbs, parsley, lemon zest, garlic, olive oil, salt, and pepper.
  • 3️⃣ Pat fish dry and press the herb mix firmly onto the top side.
  • 4️⃣ Place fillets on parchment-lined tray, crust side up.
  • 5️⃣ Bake for 12–15 min until crust is golden and fish flakes easily.
  • 6️⃣ Serve with lemon wedges and maybe... a proud grandpa story.
