Ingredients
- For the crust:
- 🍪 200g digestive biscuits
- 🧈 100g butter, melted
- For the filling:
- 🧀 400g cream cheese
- 🍋 Juice and zest of 2 lemons
- 🍬 100g sugar
- 🥛 150ml heavy cream
- 🥄 1 teaspoon vanilla extract
- For the topping (optional):
- 🍋 Thin lemon slices or lemon zest for decoration
Preparation
- 1. 🍪 Crush the biscuits into fine crumbs and mix with melted butter.
- 2. 🥣 Press the mixture firmly into the base of a springform pan. Chill in the fridge while preparing the filling.
- 3. 🧀 In a bowl, beat cream cheese, sugar, lemon juice, lemon zest, and vanilla until smooth.
