🧀 A creamy, refreshing cheesecake with a bright lemon flavor and buttery biscuit base — perfect for sunny days and sweet moments!
For the crust:
🍪 200g digestive biscuits
🧈 100g butter, melted
For the filling:
🧀 400g cream cheese
🍋 Juice and zest of 2 lemons
🍬 100g sugar
🥛 150ml heavy cream
🥄 1 teaspoon vanilla extract
For the topping (optional):
🍋 Thin lemon slices or lemon zest for decoration
1. 🍪 Crush the biscuits into fine crumbs and mix with melted butter.
2. 🥣 Press the mixture firmly into the base of a springform pan. Chill in the fridge while preparing the filling.
3. 🧀 In a bowl, beat cream cheese, sugar, lemon juice, lemon zest, and vanilla until smooth.
4. 🥛 Whip the heavy cream until soft peaks form, then gently fold into the cream cheese mixture.
5. 🍋 Pour the filling over the chilled crust and smooth the top.
6. ❄️ Chill in the fridge for at least 4 hours or overnight.
7. 🎨 Decorate with lemon slices or extra zest before serving.
