• For the crust:
• 🍪 200g digestive biscuits
• 🧈 100g butter, melted
• For the filling:
• 🧀 400g cream cheese
• 🍋 Juice and zest of 2 lemons
• 🍬 100g sugar
• 🥛 150ml heavy cream
• 🥄 1 teaspoon vanilla extract
• For the topping (optional):
• 🍋 Thin lemon slices or lemon zest for decoration

Preparation

1. 1. 🍪 Crush the biscuits into fine crumbs and mix with melted butter.
2. 2. 🥣 Press the mixture firmly into the base of a springform pan. Chill in the fridge while preparing the filling.
3. 3. 🧀 In a bowl, beat cream cheese, sugar, lemon juice, lemon zest, and vanilla until smooth.
4. 4. 🥛 Whip the heavy cream until soft peaks form, then gently fold into the cream cheese mixture.
5. 5. 🍋 Pour the filling over the chilled crust and smooth the top.
6. 6. ❄️ Chill in the fridge for at least 4 hours or overnight.
7. 7. 🎨 Decorate with lemon slices or extra zest before serving.
