Grandma didn’t always bake. Sometimes, she just stirred. These ricotta cups were her summer shortcut: sweet strawberries, smooth ricotta, and a hint of honey. They’re soft, slightly tangy, and feel like you’re eating a cloud someone dropped into a berry patch.
🍓 200 g (7 oz) fresh strawberries, sliced
🧀 250 g (9 oz) ricotta cheese
🍯 1–2 tbsp honey (or maple syrup)
🍋 Optional: zest of 1/2 lemon or a few mint leaves
1️⃣ In a bowl, mix 🧀 ricotta with 🍯 honey until smooth and creamy.
2️⃣ Spoon into serving cups.
3️⃣ Top with 🍓 strawberries and a little 🍋 zest or mint if using.
4️⃣ Chill for 15–20 min or serve immediately.
