These fritters are what happened when grandma had one zucchini and no patience. Grated, mixed, fried – done. They’re crispy outside, tender inside, and vanish faster than you can fry the next batch. Great hot, cold, or standing over the stove with your fingers.
🥒 2 small zucchinis (about 300 g / 10.5 oz), grated
🥚 2 eggs
🌾 4 tbsp flour
🧄 1 garlic clove, minced
🧂 Salt and pepper to taste
🌿 Optional: chopped parsley or mint
🫒 Olive oil for frying
1️⃣ Grate 🥒 zucchini and squeeze out excess water using a kitchen towel.
2️⃣ In a bowl, mix zucchini with 🥚 eggs, 🌾 flour, 🧄 garlic, and 🧂 seasoning.
3️⃣ Add 🌿 herbs if using.
4️⃣ Heat 🫒 oil in a pan. Drop spoonfuls of batter and flatten slightly.
5️⃣ Fry 2–3 minutes per side until golden and crisp.
6️⃣ Drain on paper towels. Serve warm.
