Warm, creamy, and bursting with roasted corn flavor 🌶️🧀 Esquites is the cozy street food version of elote in a cup — a Mexican favorite that blends sweet corn with chili, lime, and tangy crema.
Ingredients
🌽 400 g sweet corn kernels (14 oz), fresh or frozen
🧈 20 g butter (1.5 tbsp)
🧄 1 garlic clove, minced
🧅 50 g white onion, finely chopped (1.75 oz)
🥣 60 g Mexican crema or sour cream (2 oz)
🧀 40 g crumbled cotija cheese (1.4 oz)
🍋 10 ml lime juice (2 tsp)
🌶 1 g chili powder (¼ tsp)
🧂 Salt to taste
🌿 Optional: chopped cilantro for garnish
Preparation
1️⃣ In a skillet, melt butter over medium heat. Sauté garlic and onion until translucent.
2️⃣ Add corn and cook 6–8 minutes until slightly charred.
3️⃣ Remove from heat and stir in crema, lime juice, chili powder, and salt.
4️⃣ Top with cotija and fresh cilantro. Serve warm or at room temperature 🌽🥄
