**Tamarind Syrup (makes ~200 ml):
💧 Water: 200 ml (¾ cup / 6.8 fl oz)
🟤 Seedless tamarind pulp: 60 g (¼ cup packed / 2.1 oz)
🍬 Sugar (or jaggery): 120 g (½ cup / 4.2 oz)
🌿 Green cardamom, lightly crushed: 2 pods
Method (syrup): Simmer water + tamarind + cardamom 5 min. Rest 5 min, strain, stir in sugar to dissolve, cool. Refrigerate 2 weeks.
Preparation
