Description
This cheese burek is rolled into spirals, baked until golden, and pulled apart with your fingers while it’s still warm. It’s flaky, cheesy, and tastes like every Balkan morning in one bite.
Ingredients
📜 500 g phyllo dough (1.1 lb)
🧀 400 g feta or brined cheese, crumbled (2 cups)
🥚 1 egg (optional, for creamier filling)
🫒 100 ml sunflower or neutral oil (½ cup, for brushing)
💧 100 ml sparkling water (½ cup)
🧈 30 g melted butter (2 tbsp)
🧂 Pinch of salt (only if cheese is mild)
Preparation
1️⃣ Preheat oven to 200°C (400°F) and grease a large baking pan.
2️⃣ Make filling: In a bowl, mix crumbled cheese and egg (if using).
3️⃣ Layer & roll: Place 2 sheets of phyllo, brush with oil, add filling along the edge, and roll into a log.
4️⃣ Shape: Coil the log into a spiral and place in center of the pan. Repeat and wrap rolls around it.
5️⃣ Top: Mix sparkling water with melted butter and pour evenly over the pie.
6️⃣ Bake: Bake for 35–40 min until golden and crisp.
