Description
This is the kind of dish grandma made without fuss — mushrooms, greens, garlic, and a splash of soy sauce. Simple, satisfying, and full of earthy umami flavor, it’s the perfect fasting-friendly Chinese classic.
Ingredients
🍄 200 g mushrooms (shiitake or cremini), sliced (2 cups)
🥬 150 g baby bok choy, halved lengthwise (1 ½ cups)
🧄 3 garlic cloves, minced
🫒 15 ml sesame oil (1 tbsp)
🫙 30 ml light soy sauce (2 tbsp)
🍶 10 ml rice vinegar (2 tsp)
🌶️ Optional: pinch of chili flakes
🧂 Salt and black pepper to taste
💧 30 ml water (2 tbsp) for steam-frying
Preparation
1️⃣ Heat sesame oil in a large skillet or wok over medium heat. Add garlic and sauté for 30 seconds until fragrant.
2️⃣ Add mushrooms and stir-fry for 3–4 minutes until they begin to brown.
3️⃣ Add bok choy, soy sauce, vinegar, water, salt, and chili flakes (if using). Cover and steam-fry for 2–3 minutes.
4️⃣ Uncover and cook for 1 more minute to evaporate excess liquid.
5️⃣ Serve hot as a main or side.
