Ingredients

  • 🍗 500 g (1 lb) boneless chicken thighs, skin-on
  • 🧂 Salt to taste
  • 🥄 2 tbsp vegetable oil
  • For Teriyaki Sauce
  • 🍶 60 ml (¼ cup) soy sauce
  • 🍶 60 ml (¼ cup) mirin
  • 🍶 60 ml (¼ cup) sake
  • 🍬 2 tbsp sugar

Preparation

  • 1️⃣ Pat dry chicken thighs and season lightly with salt.
  • 2️⃣ Heat vegetable oil in a frying pan over medium heat.
  • 3️⃣ Place chicken skin-side down and cook until golden and crispy (about 5–6 min).
  • 4️⃣ Flip and cook the other side for 4–5 min until fully cooked.
  • 5️⃣ Mix soy sauce, mirin, sake, and sugar in a bowl to make the sauce.
  • 6️⃣ Pour the sauce into the pan with chicken and simmer until thick and glossy.
  • 7️⃣ Coat the chicken evenly in the sauce.
  • 8️⃣ Slice and serve with steamed rice, spooning extra sauce on top.
