Ingredients
- 🐟 4 salmon fillets, skin-on (120–150 g each)

- 🍶 60 ml soy sauce
- 🍯 40 ml mirin

- 💧 30 ml water
- 🌿 1 tsp sesame seeds + 1 spring onion, sliced (to finish)
Preparation
- 1️⃣ Pat salmon dry; season lightly with salt & pepper.
- 2️⃣ Whisk soy, mirin, sugar, water, garlic, and ginger.
- 3️⃣ Heat oil in a nonstick pan (medium-high). Sear salmon skin-side down 3–4 min, flip and cook 1–2 min.
- 4️⃣ Pour in teriyaki mixture; simmer 2–3 min until thick and glossy, spooning over fish.
- 5️⃣ Sprinkle sesame and spring onion. Serve with rice and steamed greens.
