Ingredients

  • 🍪 130 g digestive or graham biscuits
  • 🧈 60 g melted butter
  • Filling:

  • 🥚 2 eggs
  • 🥛 120 ml sour cream or Greek yogurt
  • 🍋 1 tsp lemon juice
  • 🍵 2½ tsp matcha powder (sifted)
  • 🌾 1 tbsp cornstarch

Preparation

  • 1️⃣ Crust: Crush biscuits finely, mix with melted butter, and press into lined springform pan. Chill 15 min.
  • 2️⃣ Preheat oven: 160°C.
  • 3️⃣ Filling: In a large bowl, beat cream cheese and sugar until smooth. Add eggs one by one, then sour cream, lemon juice, cornstarch, and matcha. Mix just until combined.
