Preparation

• Prepare the tart pan 🥧 ‌ Line the base of a 23 cm tart pan (9 in) with parchment paper. Lightly grease the sides so the crust releases cleanly after chilling. ‌
• Make the walnut crust 🌰 ‌ Mix ground walnuts, crushed biscuits, melted butter, honey, cinnamon, and salt until the crumbs look evenly moistened and hold together when pressed. ‌
• Press and chill ❄ ‌ Press the crust firmly into the base and sides of the tart pan. Use the bottom of a glass to compact it evenly. Chill for 30 min until firm. ‌
• Mix the yogurt cream 🍶 ‌ In a bowl, whisk thick yogurt, cream cheese, honey, lemon juice, lemon zest, and vanilla for 1 min, until smooth, thick, and creamy. ‌
• Fill the crust 🥄 ‌ Spoon the yogurt cream into the chilled crust and smooth the top. Chill for 45 min so the cream sets and the crust becomes easier to slice. ‌
• Glaze the figs 🍯 ‌ Add honey, lemon juice, lemon zest, and cinnamon to a small pan over low heat. Warm for 2 min, just until glossy. Add the figs and gently turn them for 1 min so they shine without collapsing. ‌
• Cool the topping 🛋 ‌ Transfer the glazed figs to a plate and let them cool for 10 min. The topping should be glossy and soft, not hot enough to melt the cream. ‌
• Assemble the tart ✨ ‌ Arrange the glazed figs over the yogurt cream. Scatter toasted walnuts between the figs and drizzle over any remaining honey lemon glaze. ‌
• Chill before slicing 🔪 ‌ Chill the finished tart for 20 min. Slice with a sharp knife wiped clean between cuts for neat creamy pieces. ‌ 🔟 Serve elegant 🍋 ‌ Finish with extra honey, lemon zest strips, mint if using, and a few more toasted walnuts.
